Tomato and Green Pepper Omelet Recipe


Ingredients:
1 tablespoon olive or vegetable oil
1 medium onion, thinly sliced
1 small green pepper, coarsely chopped
1 small tomato, chopped
4 eggs
1 tablespoon milk
Tabasco sauce to taste
Salt and pepper to taste
Parsley to garnish
Shallow 24 cm glass pie dish

Method:
In pie dish, place oil, onion, green pepper and tomato; stir to combine. Cook, covered, on High (100% power) for 4 minutes, or until softened, stirring twice.
Meanwhile, in mixing bowl, with fork, beat eggs, milk, Tabasco sauce, salt and pepper
With slotted spoon, remove vegetable mixture from pie dish; set vegetable mixture aside.

Into pie dish used for cooking vegetables, slowly pour egg mixture. Cook egg mixture on High for 1 minute.
With spoon or spatula, move cooked edge to centre of dish. Cook, covered with kitchen paper, on High for 1-1 1/ 2 (1:30) minutes, until omelette is set but still moist in centre.
Over half of omelette, spoon vegetable mixture. With spatula, gently fold omelette over vegetables.
To serve; slide omelette on to warmed serving platter. Garnish with parsley and serve immediately.
