Brekki Bars Recipe
400ml Organic Coconut Cream
1/4 cup Granulated Stevia
3 cups Organic Rolled Oats
1 cup Mixed Dried Fruits (we used currants, dried cranberries, goji berries and chopped dates)
1 cup Raw Nuts (almonds, pistachios, cashews, hazelnuts etc)
1 cup mixed seeds, lightly toasted (Pepitas, sunflower seeds, Linseeds etc)
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Nutmeg
Method:
Preheat oven to 180'C (350'F)
Place the coconut cream and sweetener into a saucepan and place on a medium heat, cook for 8mins or until the cream boils and the sweetener dissolves.
In a large mixing bowl, place all the remaining ingredients and mix thoroughly then pour the cream over and incorporate it evenly.
Press the mix into a baking dish that is lined with baking paper.
Place in oven and bake for 20mins.
Remove from oven and while still warm, cut into bars and place on a cooling rack.
If, when you cut the bars, they seem too wet or soft for your liking, return bars to oven and bake for a further 8-10mins and serve.
