Crazy Self-Filling Cupcakes



Ingredients:
3 C. flour
2 C. sugar
6 T. cocoa
3 c. baking soda
1 c. salt
2 T. vinegar
1 T. vanilla
1/2 C. melted butter
2 C. cold water
Filling:
1 - 8 oz cream cheese pkg, softened
1/3 C sugar.
1 egg
Pinch of salt
1 - 6 oz. Chocolate chips

Method:
Mix all ingredients except filling. Well beat. Fill paper molds 2/3 in muffin cups. For filling, soften cream cheese cream with sugar. Beat egg and salt. Stir in chocolate chips.

Drop rounded teaspoon filling in the center of each cupcake. Bake 20 minutes at 350 degrees. Can leave plain or sprinkle with sugar or pastry gel with chocolate glaze. Makes 30 small cakes.
