Ground Beef and Rice


Ingredients:
1 can black beans, drained and rinsed
1 lb extra lean beef
2 cups brown rice
1TBSP coconut oil
1 medium red onion diced, divided
3 cloves garlic, minced
1 small jalapeno, diced
1 TBSP extra virgin olive oil
1 TSP Oregano
1 cup salsa

Method:
In a small bowl, add the salsa, the remaining red onion, and 1 clove of garlic minced, and the olive oil …refrigerate.
In a large fry pan, add to the coconut oil, ½ of the chopped onion, jalapeno and 2 cloves of garlic. Cook on low to medium. Add the ground beef, crumbled, stir in with the onion and garlic. Add oregano. When the meat has browned, add the black beans and simmer on low heat. Cook the brown rice according to directions, and set aside.

Serving- Keep the beef beans and rice hot. In a large dish spread a layer of the beef and bean mixture first, followed by a layer of the brown rice and top with the cold salsa.
