Eggplant Chips Recipe



Ingredients:
1 eggplant, sliced 1/4" rounds
1/2 cup Ezekiel bread crumbs
1/2 cup egg whites
1 clove garlic, chopped
1/2 TSP dried oregano
salt and pepper to taste
2 TBSP coconut oil

Instructions:
In a large pan, melt coconut oil, add in chopped garlic. Combine oregano, bread crumbs, salt and pepper in a shallow dish. Pour egg whites into a separate bowl. Dip eggplant slices in egg whites, then the bread crumbs, tossing to coat. Then cook eggplant in oil until lightly browned, turning once.
