Chocolate Date and Nut Cake
Ingredients:
1 cup chopped dates
1 cup sugar substitute
2 cups boiling water
2 large eggs
2 TSP baking soda
2 TBSP butter, melted
1 TSP vanilla extract
3/4 cup slivered almonds
3 cups whole wheat flour
3 scoops Chocolate Protein powder
Method:
Preheat the oven to 350°F. Mix the dates, boiling water, and baking soda in a bowl. Set aside to cool slightly. Mix together the sugar substitute and eggs in a large bowl, then add the butter and vanilla and beat well. Sift the flour and salt together and add to the mixture, stirring just to combine. Gently mix in the dates and nuts, with their liquid, until just combined. Spray a tube pan with cooking spray. Pour mixture evenly into pan. Bake for 40 minutes or until tooth pick comes out clean. Allow to cool. I served mine with Hersey's sugar free chocolate sauce.
