Pecan Pie Recipe



Ingredients:
8 tablespoons sugar
2 cups milk scalded
1 cup sugar
¼ teaspoon salt
½ teaspoon vanilla
4 tablespoons flour
4 egg yolks beaten
1 unbaked 9 inch pie shell
1 ½ cups chopped pecans
4 egg whites
8 tablespoons sugar
¼ cup chopped pecans

Method:
In a heavy saucepan over low heat, melt 8 tablespoons sugar
Pour in milk and stir until sugar re-melts and it is combined well.
Combine next 4 ingredients, mixing well.
Add to milk mixture
Add yolks, and blend.
Pour mixture into pie shell.
Bake at 375 degrees for about 40 minutes until mixture is firm
Remove from oven, spread 1 ½ cups pecans over top of filling.
Make meringue by whipping whites slowly adding 8 tablespoons sugar till stiff.
Cover pecan layer with meringue and sprinkle with ¼ cup pecans.
Bake at 350 degrees until meringue is golden brown.
