Ginger Scones Recipe


Ingredients:
4 cups self raising flour
3/4 cup cream
2 tblsp milk
185 ml ginger ale
4 tblsp uncrystallised ginger, finely chopped
pinch of salt

Method:
Preheat oven to 200 degrees & lightly grease a baking tray
In a mixing bowl, sift flour & salt & make a well in the centre
Mix in the cream, milk, ginger ale & uncrystallised ginger until combined

Gather the dough together using your hands
Knead gently until smooth, but don't overwork the dough or scones will be tough
Roll out dough to about 1.5 cm thickness & use a 6 cm round cutter to cut out approximately 18 scones
Place on tray, slightly apart

Bake for 12-15 minutes until risen & golden brown
