Slow roasted lamb shoulder
Ingredients:
1 head of garlic
1 bunch of rosemary
1 Lamb Shoulder (with bone)
1 tbsp olive oil
Directions:
Preheat oven to 150 degrees
Separate the cloves of garlic
Lay half the rosemary & half the garlic in the base of a roasting tray
Lay the shoulder on top
Cover with the remaining garlic & rosemary, & add the olive oil as well
Cover tightly with aluminium foil & bake for 4-5 hours
Rest for 20 minutes prior to serving
Serve with roast potatoes & your favourite smashed vegetables.
