Chilled Creamy Salad & Fruit Mix
1 cup potato (2), peeled, cubed and boiled
1/2 cup carrot (1), peeled, cubed and boiled
1/2 cup peas, boiled
2 cucumbers, peeled, deseeded and cubed
1 medium tin fruit cocktail
1 cup mayonnaise
1 cup fresh cream, whipped
2 tbsp caster sugar
1 tsp salt
1/2 tsp white pepper
1 tbsp gelatine powder
1 packet pineapple jelly
1 cup water
Method:
Add gelatine into 1/4 cup water, mix well and keep aside until it swells. Boil 1 cup water in a pan. Add pineapple crystals and mix. Reduce heat, add the gelatine mixture into the pineapple water. Mix well until everything is dissolved and take off heat. In a bowl take mayonnaise, add whipped cream, salt, white pepper, caster sugar and the dissolved mixture. Beat on low speed with an electric mixer. Add the boiled potatoes, cucumbers, carrots, peas and fruit cocktail without the syrup. Mix everything well with a spatula. Spoon out into your serving bowl and refrigerate for 5-7 hours until it thickens.
