Asam Pedas Fish Recipe



Ingredients:
500 g stingray,cut into 2 squares
60-80 ml cooking oil
Spice Paste/Finely Ground:
15-20 dried chilli,soak and cut into 3 cm
2 big onions (about 200g),peeled and sliced
2 cloves garlic,peeled
1/2 tbsp blacan(shrimp paste)

3 stalk lemongrass,slightly bruised
3 stalk polygonum leaves ( daun kesom )
5 pieces tamarind peel ( asam keping )
80 g tamarind paste,mixed with 250 ml water
500 ml water
2 tbsp sugar or to taste
1 tsp salt to taste

Directions:
1.Using an electric blender,finely grind spice paste,adding a little water to move the blades.
2.In a wok or frying pan,heat oil over medium heat,saute ground spice paste until fragrant,stirring continuously to prevent burning.

3.Once spice paste is fragrant,add in ingredients B.
4.Simmer over low heat for 10 minutes.
5.Add in fish pieces,salt and sugar to taste.Cook for further 8-10 minutes till fish is cooked.
6.Turn off heat.Serve with plain rice.
