Soft Pretzels Recipe




Ingredients:
½ cup warm water
1 tsp. white sugar
8g active dry yeast or 2 ½ tsp if bulk
1 cup warm water
1 Tbsp white sugar
½ tsp salt
3 ¾ cups approx plain flour
1 egg, lightly beaten
1 Tbsp water
Coarse salt
Sesame seeds
Poppy seeds

Directions:
Stir first amount of water and sugar in a small bowl until sugar is dissolved. Sprinkle over yeast and stir until dissolved. Let stand for 10 mins.
Stir second amount of water and sugar in a large bowl until sugar is dissolved. Add salt and yeast mixture and stir to combine.
Gradually mix in flour until a soft dough forms. Turn out onto lightly floured surface and knead for about 5 mins until smooth and elastic. Let rest for 10 mins.
Divide dough into 12 equal portions and roll each one into a 37.5 cm (15 inch) rope. Shape each “rope” into a pretzel and arrange onto greased and floured baking trays (or line trays with silicone paper).
Combine egg and remaining water and brush the tops of each pretzel. Sprinkle with salt (and sesame seeds or poppy seeds if desired). Bake in 200˚C (425˚F) oven for about 15 mins or until golden brown.
For smaller, fatter pretzels or pretzel shaped dinner rolls, divide dough into 16 equal pieces and roll out to approx 33 cm in length.
