Mock Chicken Spread
Ingredients:
1 large tomato, peeled & chopped
1 small onion, finely diced
1 dessert spoon butter
1 egg, beaten
1/2 tsp salt
90 g cheese, finely grated
1/2 tsp Mixed Herbs
Method:
Simmer all ingredients, except for the egg, in a saucepan for 10 minutes
Add the egg & heat gently until the mixture thickens DO NOT allow to boil
Remove from heat & stir until thick
Cool, transfer to a jar & keep refrigerated for 1 week
